So I made this recipe today and it was delicious 🙂 I thought I’d share just in case anyone else is interested. I am not a big fan of eggplant, but I do like it in sauces ‘n’ such. Apparently you can use this with whole wheat pasta or as a spread for crackers / veggies.
The author of this blog used roasted eggplant instead of using oil to make a healthier choice –woo hoo 🙂
